    • Wash and soak the rice, urad dal, and fenugreek seeds separately for 4-6 hours.
    • Grind the urad dal and fenugreek seeds into a smooth paste using a wet grinder or blender.
    • Grind the rice to a slightly coarse texture.
    • Mix both pastes and add salt. The batter should have a thick pouring consistency.
  2. Fermentation:
    • Cover the batter and leave it to ferment in a warm place for 8-12 hours (overnight) until it doubles in volume and develops a tangy aroma.
  3. Cooking:
    • Heat a flat non-stick pan or cast-iron griddle on medium heat.
    • Pour a ladleful of batter in the center and spread it into a thin circle using the back of the ladle.
    • Drizzle a few drops of oil or ghee around the edges.
    • Cook until the edges lift slightly and the bottom is golden and crisp.
    • Fold and serve hot with coconut chutney and sambar.
